Mom's Noodle Salad... A Perfect Grilling Side Dish {Vlasic Farmer's Garden Pickles}


You already know how incredibly well these Farmer's Garden
pickles by Vlasic® compliment my Panini sandwiches...
But as delicious as these pickles are on their own or next to
burgers and sandwiches, they're also terrific as an ingredient!
Which is exactly how they played this evening in my mom's noodle salad!
The word noodles is so much more fun
to say than pasta... Don't you think?
I think so! I also think we should all ditch the noodle salad in our
grocery stores and invest the few minutes it takes to make our own!
The base for my mom's noodle salad is the same one she uses
to make her delicious tuna salad... Dill pickle, egg and red onion!
By the way... In case you hate chopping eggs as much as I do, let me
show you a less messier way to achieve perfectly diced eggs... First,
place egg onto your egg slicer as you normally would and, slice it...
Then, carefully remove it from the slicer. With your other hand, open the
slicer again and place the egg in the opposite direction for a second slice...
Now, this is usually where I stop slicing eggs for my egg salad
since the man I love prefers big chunks of egg in his sandwich!
However, for my mom's noodle salad, we're going for
 a third slice with the egg first set down on the diagonal...
See? No fuss... No muss...
Just perfectly diced eggs for Mom's Noodle Salad!
I have to tell you that my favorite part of my mom's noodle salad is always
the dill pickle. I have always loved them. I ordered my hamburgers plain,
only pickles with extra pickles please, until I was in my early twenties!
Crunchy dill pickle adds such a delicious, lip-smacking zip that I just
cannot imagine this salad without them... Especially these beautiful
Farmer's Garden pickles by Vlasic®! In fact, I can't help adding a
little of the pickled carrots, garlic and red pepper packed into every jar!
Now, add the best mayonnaise; which, for me means only Hellman's!
Finally, crank the pepper mill a few turns for fresh cracked
black pepper and finish with a generous sprinkle of coarse sea salt!
Then... Stir it all together! And, while all the flavors
are getting to know each other, fire up your grill!
Because my mom's noodle salad always tastes best paired
with my favorite, German weisswurst and bratwurst!
Or... Bacon-wrapped Filet Mignon!

  2. I have been reading your blog for several years and I cannot tell you how much I love it! I am also German, and my parents adopted a boy from Germany who lost his parents in WWII. He had polio and could not walk, but was/is an amazing person, even with the German stubbornness that we are famous (infamous) for! Anyway, I adore your blog and wanted to let you know. Thank you for taking the time/effort to write, and for the beautiful pictures.

  3. Yes I do like the word noodles over pasta. Sounds like a comfort food and if your pictures don't show comfort food----------well goodness all I can say is "what would be comfort food"? What a great recipe--and how cute showing the dicing of the egg. Love it!

Quick question did I miss the measurements for th noodle salad, it looks amazingly yummy and my mouth has been watering for it since I saw your post, thanks a bunch.

    Thank you so very much for your kind comment... It thrills me to know that you are reading along!

    No.... You didn't miss the measurements for my mom's noodle salad at all! To be honest, it's always been "to taste" - Meaning you decide how much salt/pepper, egg, pickle, onion and mayo to add to make it your own.

    Nevertheless, I'm happy to outline my own preferences and let you take it from there. :)

    I always use a whole box of elbow noodles... Adding (all diced) 4-6 eggs, 6-8 dill pickle spears (you could also mix in some sweet pickles if you'd like!) half a medium white onion and 3/4 to one cup mayonnaise - depending on how much mayo you like. Mix it all together in a large bowl and salt/pepper to taste. To finish, sprinkle with fresh parsley or cilantro - Your choice!
